Oatmeal Raisin Cookies

I found this recipe from SparkRecipes interesting.

  • 2 large eggs
  • 1 over ripe banana
  • 1Cup raisins
  • 1/2 Cup whole wheat flour
  • 1/2 Cup instant powdered milk
  • 2 tsp baking powder
  • 2Cup old fashioned oats
  • 1Cup chunky peanut butter
  • 2 Tbs unsalted butter
  • 1/2 Cup stevia
  • 2 tsp vanilla
  • 1tsp allspice
  • 1tsp cinnamon

  1. Preheat oven to 350 degrees.
  2. Cream softened butter with the banana. Add stevia to this mix, along with vanilla and eggs. Combine well.
  3. Add dry ingredients: whole wheat flour, instant powdered milk, baking powder, old fashioned oats, allspice, and cinnamon. Mix all well.
  4. Add 1C chunky peanut butter. Mix and add raisins. Dough should follow photon around & be quite stiff.
  5. Drop by teaspoonfuls onto UNGREASED cookie sheet. Cook at 350 until the bottoms are just toasted. 12 to 15 minutes, depending on your oven. Cool cookies on wire racks, not on the hot pans. Keep in ice box, since they have no preservatives. They may not last that long, however.
